ONA Recipe Box -- Baked Pumpkin and Onions

This is an old-fashioned way of serving the great American squash. We really can't give you amounts on this one -- it's much too simple for that. Just make as much or as little as you need. We generally serve this as a vegetable dish.

Serves 6-8    Printer-friendly version

Ingredients

Nonstick cooking spray
Pumpkin slices, peeled, 1/2-inch thick
Yellow onions, peeled and sliced
Salt and pepper
Olive oil
Brown sugar

Preparation Instructions

Preheat oven to 350 degrees. Spray the inside of a glass baking dish with nonstick cooking spray. Clean and peel some pumpkin and cut it into thick slices. Arrange them in baking dish and add sliced onions. Brush with olive oil and sprinkle with salt, pepper and brown sugar. Repeat with another layer, if needed. Bake uncovered until tender, about 45 minutes or longer.
