ONA Recipe Box -- Bran Muffins
These bran muffins bake up moist and chewy. We've tried a lot of bran muffin recipes -- this one is a winner!

Ingredients
1 cup unprocessed (miller's) wheat bran*
2/3 cup unbleached all-purpose flour
2/3 cup whole wheat flour
1 1/4 teaspoons baking soda
1/8 teaspoon salt
1/3 cup ground flaxseed* (optional, but very healthy)
1 teaspoon ground cinnamon (optional)
1 1/4 cups low-fat buttermilk
1/2 to 3/4 cup sugar, brown sugar, or Splenda
1/4 cup unsweetened applesauce (one of the small cups)
1 large egg
1 1/2 tablespoons canola oil
1 teaspoon vanilla extract
1 teaspoon orange extract (optional)
1/2 cup chopped walnuts
*Miller's wheat bran and flaxseed can be found in the bulk bins at natural foods stores (i.e., Whole Foods). Either grind your own flaxseed in your coffee grinder, or buy flaxseed meal.
Preparation Instructions
Preheat oven to 350 degrees. In a medium bowl, whisk together bran, flours, soda, salt, ground flaxseed and cinnamon. Set aside. In a larger bowl, using a handheld electric mixer, beat together the buttermilk, brown sugar, applesauce, egg, oil and vanilla until frothy -- about 2 minutes. Stir in flour mixture until combined -- don't over mix. Fold in chopped walnuts.
Generously spray 12-cup muffin tins with cooking spray. Using a 1/3-cup measuring cup, divide batter equally among the 12 cups (a good, full 1/3-cup measuring cup is just about right for each muffin cup).
Bake for 19 minutes (timed). Do not overbake. Cool on wire rack. We individually wrap each cooled muffin in plastic wrap to keep them really fresh.
