ONA Recipe Box -- Brownies

Moist, chewy, low-fat, and healthy brownies. What a combination -- can you believe it?!

Ingredients

1/4 cup plus 1 tablespoon unbleached flour
1/4 cup oat bran
1/3 cup cocoa powder
3/4 cup sugar
1/4 cup instant nonfat dry milk powder
1 pinch baking soda
1/4 cup chocolate syrup
3 egg whites
1 teaspoon vanilla extract
1/3 cup chopped walnuts (optional)

Preparation Instructions

Preheat oven to 325 degrees. Combine the flour, oat bran, cocoa, sugar, milk powder, and baking soda in a large bowl, and stir to mix well. Stir in the chocolate syrup, egg whites, and vanilla extract. Fold in the nuts, if desired.

Coat an 8-inch square pan with non-stick cooking spray. Spread the batter evenly in the pan, and bake for 23 minutes, or just until the edges are firm and the center is almost set.

Cool to room temperature. Cut into 16 squares and serve.
