Ingredients
Fruit Filling
5 cups sliced peeled pears (about 5 medium)
1/3 cup dark raisins
Topping
1/4 cup barley nugget cereal (Grape Nuts) or chopped walnuts
1/4 cup light brown sugar
3 tablespoons whole wheat flour
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon frozen apple juice concentrate, thawed
Preparation Instructions
To make the filling, combine the pear slices and raisins in a large bowl and toss to mix well. Coat a 9-inch deep-dish pie pan with nonstick cooking spray and spread the fruit evenly in the pan. Set aside. To make the topping, combine the cereal or walnuts, brown sugar, flour, cinnamon and nutmeg in a medium-sized bowl and stir to mix well. Add the juice concentrate and stir until the mixture is moist and crumbly. Sprinkle the topping over the fruit and bake uncovered for 50 minutes or until the topping is browned and the filling is bubbly around the edges. Remove the dish from the oven and let stand for at least 5 minutes. Serve warm or at room temperature.
