ONA Recipe Box -- Pumpkin Soup
Forget pumpkin pie and think soup! This recipe for pumpkin soup is quick and easy, good hot or cold.

Ingredients
16-ounce can pumpkin
2 cups water (or vegetable or chicken broth)
1 cup evaporated skim milk
1 tablespoon honey
Any spice you prefer (probably not pumpkin pie spice)*
*Pumpkin and curry are good together in a hot soup. If you add curry, try to balance the flavor with a little nutmeg and pepper. This is a recipe you can play with to make it suit your taste. Believe it or not, I like to add a little peanut butter to my pumpkin soup. It gives a nice Thai flavor.
Preparation Instructions
Heat slowly until nice and hot.
