Instead of basting the turkey with butter or drippings, rub the outside with canola or olive oil; then baste the bird with defatted chicken broth. This also adds nicely to the stock for gravy when the bird is done.
Instead of making the gravy with the hot pan drippings, scrape the pan and throw it in the freezer while the bird is resting. The fat will rise to the top when it cools, and you can simply toss it out. When you re-heat the defatted drippings, sift in some cake flour and whisk to make a smooth gravy.
